Sendai Beef: The Highest Grade of Japanese Black Wagyu

The History of Sendai Beef

A Heritage of Lineage and the Fertile Lands of Miyagi

Miyagi Prefecture is one of Japan’s leading rice-producing regions, blessed with fertile soil, pristine water, and a long-standing agricultural heritage.

The history of Sendai Beef dates back to 1931, when the Miyagi Prefectural Livestock Experiment Station introduced breeding bulls from Hyogo Prefecture—an area renowned for high-quality Wagyu—to improve and elevate the quality of local beef.

The goal was to develop cattle with finer marbling, superior tenderness, and a richer flavor profile.

Over the following decades, Miyagi Prefecture continuously advanced its breeding programs while refining cattle-rearing techniques with greater precision and care.

A major turning point occurred in 1974, when an exceptional breeding bull named “Shigeshigenami” was brought from Hyogo to Miyagi.

Shigeshigenami was the offspring of the famous bull “Shigekanami” and played a pivotal role in the development of the Wagyu breed in Miyagi Prefecture.

He sired approximately 40,000 calves, many of which exhibited outstanding meat quality, forming the vital genetic foundation for modern-day Sendai Beef.

This distinguished lineage has been consistently passed down through subsequent generations.

Through continuous selective breeding, the advancement of rearing techniques, and the close individual care of each animal, the quality of Japanese Black cattle in Miyagi has been steadily elevated.

Miyagi’s agricultural environment also plays a crucial role in the unique identity of Sendai Beef.

The prefecture is highly acclaimed for its premium rice varieties, such as “Sasanishiki” and “Hitomebore.”

The high-quality rice straw resulting from these crops serves as a vital nutritional source for the cattle.

Pristine water, fertile soil, and nutrient-rich rice straw link Miyagi’s rice cultivation and cattle-rearing cultures, creating a unique regional Wagyu culture.

Cattle destined for Sendai Beef are meticulously raised for approximately two and a half years, with farmers closely monitoring the health and physical condition of each animal.

However, being raised in Miyagi Prefecture alone is not enough to earn the title of “Sendai Beef.”

Only cattle that meet the brand’s exceptionally strict certification standards can use the name “Sendai Beef.”

This uncompromising commitment to quality is what sustains the enduring reputation of Sendai Beef.

The fusion of excellent lineage, Miyagi’s natural environment, locally produced rice straw, and the dedication of skilled farmers results in beef with beautiful marbling, exceptional tenderness, and a remarkable depth of flavor.

With every bite, the rich mellow fat and natural juices gently spread across the palate.

This is “Sendai Beef”—a Japanese Black Wagyu brand reserved exclusively for beef that meets the highest standards.

Strict Certification Criteria for Sendai Beef

The certification standards established by the Sendai Beef Brand Promotion Council are extremely rigorous.

Simply being raised in Miyagi Prefecture is insufficient to be certified as Sendai Beef.

To be eligible for the “Sendai Beef” name, the cattle must meet all of the following requirements:

1. Breed

The cattle must be Japanese Black, or “Kuroge Washu.”

Only cattle from this renowned Wagyu breed that meet the strict quality standards of the Sendai Beef brand are eligible for certification.

2. Rearing Location and Registered Farmers

The cattle must be raised under appropriate individual management by registered Sendai Beef farmers.

Miyagi Prefecture must be the location where the cattle spend their longest fattening period and must be the site of the final fattening stage before processing.

Throughout this period, farmers closely supervise the health, diet, and physical condition of each animal.

3. Sales and Marketing Channels

The cattle must enter the market through trading markets, carcass markets, livestock shows, or other distribution channels officially recognized by the Sendai Beef Brand Promotion Council.

This system ensures consistent standards and quality control from farm to market.

4. Meat Quality Grade

The beef must receive a carcass grade of A5 or B5 according to the official evaluation system of the Japan Meat Grading Association.

The letters A or B refer to the “Yield Grade,” while the number refers to the meat quality.

Only meat that receives a “Meat Quality Grade 5”—the highest possible quality level—is eligible to be certified as Sendai Beef.

Meat quality is evaluated based on four main criteria:

  • Degree of marbling

  • Color and luster of the meat

  • Firmness and texture

  • Color, luster, and quality of the fat

Only beef that satisfies all Sendai Beef certification requirements and achieves the highest quality grade can be marketed as “Sendai Beef.”

The Allure of Sendai Beef

Fine marbling, exceptional tenderness, sophisticated richness, and succulent natural juices all combine to create the unique character of Sendai Beef.

1. Exquisite and Beautiful Marbling

One of the most prominent characteristics of Sendai Beef is its exceptionally fine marbling.

Delicate streaks of fat are evenly interspersed throughout the lean meat, creating the beautiful appearance that is the hallmark of premium Wagyu.

This balance between lean meat and intramuscular fat not only creates visual beauty but is also essential for the tenderness, flavor, and smooth melt-in-the-mouth sensation.

Even before cooking, the quality of the meat is immediately apparent from its fine texture and the beautiful distribution of marbling.

2. Sophisticated Richness from Miyagi’s Rice Lands

Miyagi Prefecture’s natural environment plays a vital role in the flavor of Sendai Beef.

Miyagi is one of Japan’s most famous rice-producing regions, home to prominent varieties such as Sasanishiki and Hitomebore.

Rice grown with abundant clean water also yields high-quality rice straw, which is used as a primary feed source for the cattle.

As the cattle are raised gradually in this rich agricultural environment, Sendai Beef develops a beautifully balanced flavor.

The meat offers both the intense umami of the lean portions and the delicate richness of the fat.

With every bite, the natural juices slowly spread across the tongue while the fat melts gently without overpowering the flavor of the meat.

This harmony between lean meat and fat is one of the key attractions of Sendai Beef.

3. Exceptional Texture from Meticulous Care

Cattle for Sendai Beef are raised with a focus on the detailed condition of each individual animal.

Every animal is different in terms of size, temperament, growth rate, and physical condition.

Therefore, farmers monitor each animal closely, adjusting their diet and care throughout the long rearing period.

This patient and meticulous approach, combined with generations of selective breeding and accumulated expertise, helps create Sendai Beef with a remarkably fine and tender texture.

The meat feels exceptionally soft from the very first bite.

Upon chewing, the natural juices are gently released as the umami of the lean meat and the sophisticated richness of the fat blend harmoniously.

Every bite reflects the time, experience, and dedication of the cattle farmers.

Aroma and Cooking

Another distinctive feature of Sendai Beef is the intense aroma produced during cooking.

When the meat is placed on a hot grill, iron plate, or pan, the fine marbling begins to melt, releasing an appetizing fragrance.

When served hot, the tenderness of the meat, the rich mellow fat, and the natural juices combine to create a deep and impressive flavor.

Sendai Beef can be enjoyed in various ways, including:

  • Steak

  • Yakiniku

  • Sukiyaki

  • Shabu-shabu

Each cooking method highlights different characteristics, from texture and marbling to flavor.

The true allure of Sendai Beef lies in the harmony of all its elements—lineage, environment, craftsmanship, texture, aroma, and flavor.
